Description

These Easy Date Snickers are a delightful no-bake treat combining sweet medjool dates filled with creamy peanut butter, topped with crunchy chopped peanuts, and dipped in rich dark chocolate. Finished with a sprinkle of flaky sea salt, these bite-sized snacks are perfect for satisfying a sweet craving in a healthy way.


Ingredients

Dates and Filling

  • 10 medjool dates
  • 45 tablespoons creamy peanut butter
  • 1/4 cup peanuts, chopped

Chocolate Coating

  • 1/2 cup dark chocolate chips
  • 1 tablespoon coconut oil

  • Flaky sea salt, for garnish

Instructions

  1. Prepare the Dates: Use a paring knife to carefully slice each date down the middle without cutting all the way through. Remove the pits and discard them. Place the pitted dates onto a lined pan to prepare for filling.
  2. Fill with Peanut Butter: Spoon creamy peanut butter into each date using a small spoon, or place the peanut butter into a Ziplock bag, cut off one corner, and pipe it into each date. Fill about three-quarters full to avoid overflow.
  3. Add Chopped Peanuts and Freeze: Top each peanut butter-filled date with chopped peanuts. Place the tray of dates in the freezer for 30 minutes to firm up the peanut butter, which makes dipping in chocolate easier.
  4. Melt Chocolate: Combine the dark chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring well between each, until the chocolate is smoothly melted, about 90 seconds total.
  5. Dip Dates in Chocolate: Using a fork or skewer, dip each peanut butter stuffed date into the melted chocolate, coating it evenly. Place dipped dates back onto the lined pan.
  6. Set and Garnish: Optionally sprinkle flaky sea salt over the chocolate-coated dates for a delightful flavor contrast. Let the chocolate set at room temperature or refrigerate until firm.
