Ingredients
Pickling Brine
- 4 cups water
- 2 cups white vinegar
- 3 tablespoons kosher salt
- 2 tablespoons granulated sugar
- 4 cloves garlic, peeled and smashed
- 2 tablespoons pickling spice or dill seeds
Vegetables and Herbs
- 8–10 small fresh cucumbers (kirby cucumbers preferred)
- 4–6 sprigs fresh dill
- Optional: 1 teaspoon red pepper flakes for a spicy kick
Instructions
- Prepare Cucumbers: Wash the cucumbers thoroughly and trim the ends. If desired, you can slice them into spears or coins, or leave them whole for classic dill pickles.
- Make the Brine: In a large saucepan, combine water, white vinegar, kosher salt, and sugar. Heat gently over medium heat, stirring until salt and sugar fully dissolve. Remove from heat and let the brine cool to room temperature.
- Add Garlic and Dill: Place garlic cloves, dill sprigs, and pickling spice into sterilized jars. If you like heat, add red pepper flakes now.
- Pack Jars with Cucumbers: Tightly pack the cucumbers into the jars, ensuring they fit snugly but not crushed. Pour the cooled brine over the cucumbers, covering them completely.
- Seal and Refrigerate: Seal jars with lids and refrigerate. Let pickles sit for at least 48 hours before eating to develop flavor. They will taste best after 4-7 days.
