Ingredients
Chicken
- 4 boneless, skinless chicken breasts (about 6 ounces each)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- Salt and freshly ground black pepper, to taste
Vegetables
- 2 cups broccoli florets
- 1 cup cherry tomatoes
- 1 medium red bell pepper, sliced
- 1 medium zucchini, sliced
- 1 medium red onion, cut into wedges
- 1 tablespoon olive oil
- Salt and freshly ground black pepper, to taste
- 1 teaspoon dried Italian seasoning
Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C) to ensure it’s hot enough for roasting chicken and vegetables evenly.
- Prepare Chicken: In a small bowl, combine olive oil, garlic powder, paprika, dried oregano, salt, and pepper. Rub this mixture evenly over the chicken breasts and set aside.
- Prepare Vegetables: In a large mixing bowl, toss the broccoli florets, cherry tomatoes, sliced bell pepper, zucchini, and onion with olive oil, salt, pepper, and dried Italian seasoning.
- Arrange on Sheet Pan: Spread the seasoned vegetables in an even layer on a large baking sheet. Place the chicken breasts on top, ensuring they are not crowded to allow for even cooking.
- Roast: Place the sheet pan in the preheated oven and roast for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are tender and slightly caramelized.
- Rest and Serve: Remove the sheet pan from the oven and let the chicken rest for 5 minutes before slicing. Serve the chicken alongside the roasted vegetables for a complete meal.
Notes
- For extra flavor, marinate the chicken with the seasoning mixture for 30 minutes to 2 hours before cooking.
- You can swap vegetables based on seasonality or preference; carrots, asparagus, or Brussels sprouts work great.
- If using chicken thighs, adjust cooking time accordingly, checking for doneness.
- Line the sheet pan with parchment paper or aluminum foil for easier cleanup.
