Ingredients
- 3 large tortillas or wraps
- 2 cups cooked chicken, shredded or sliced
- 1/2 cup shredded carrots
- 1/2 cup cucumber, sliced
- 1/2 cup red cabbage, shredded
- 1/4 cup green onions, chopped
- 1/3 cup peanut butter
- 2 tablespoons soy sauce
- 2 tablespoons lime juice
- 1 tablespoon honey or maple syrup
- 1 clove garlic, minced
- 1 teaspoon fresh ginger, grated
- 2–4 tablespoons water (to thin sauce)
- 1/2 teaspoon chili flakes or sriracha (optional)
Instructions
- In a bowl, whisk together peanut butter, soy sauce, lime juice, honey or maple syrup, minced garlic, and grated ginger.
- Add water gradually until the sauce reaches a smooth, pourable consistency.
- Lay each tortilla flat and spread a thin layer of peanut sauce over it.
- Add cooked chicken, shredded carrots, cucumber, cabbage, and green onions.
- Drizzle additional peanut sauce over the filling.
- Fold in the sides and roll the wrap tightly.
- Slice in half and serve immediately.
