Description

Ingredients

  • 3 large tortillas or wraps
  • 2 cups cooked chicken, shredded or sliced
  • 1/2 cup shredded carrots
  • 1/2 cup cucumber, sliced
  • 1/2 cup red cabbage, shredded
  • 1/4 cup green onions, chopped
  • 1/3 cup peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon honey or maple syrup
  • 1 clove garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 24 tablespoons water (to thin sauce)
  • 1/2 teaspoon chili flakes or sriracha (optional)

Instructions

  1. In a bowl, whisk together peanut butter, soy sauce, lime juice, honey or maple syrup, minced garlic, and grated ginger.
  2. Add water gradually until the sauce reaches a smooth, pourable consistency.
  3. Lay each tortilla flat and spread a thin layer of peanut sauce over it.
  4. Add cooked chicken, shredded carrots, cucumber, cabbage, and green onions.
  5. Drizzle additional peanut sauce over the filling.
  6. Fold in the sides and roll the wrap tightly.
  7. Slice in half and serve immediately.
