Ingredients
For the Tart Crust
- 1 1/4 cups all-purpose flour

For the Vanilla Mascarpone Cream
- 8 oz mascarpone cheese, softened

- 1 cup strawberries, sliced
- 1/2 cup blueberries
- 1 kiwi, peeled and thinly sliced
- 1/2 cup raspberries
- 1/4 cup blackberries
- 2 tablespoons apricot jam (for glaze)
- 1 tablespoon water
Instructions
- Prepare the Tart Crust: In a food processor, pulse together the flour, sugar, and salt. Add the cold butter cubes and pulse until mixture resembles coarse crumbs. Add the egg yolk and ice water gradually and pulse until dough starts to come together. Turn dough onto a floured surface and knead lightly into a ball. Flatten into a disk, wrap in plastic, and refrigerate for 30 minutes.
- Bake the Crust: Preheat oven to 350°F (175°C). Roll out the chilled dough on a floured surface to fit a 9-inch tart pan. Press dough into the pan and trim edges. Prick the bottom with a fork to prevent bubbling. Line with parchment and fill with pie weights or dry beans. Bake for 15 minutes. Remove weights and parchment, bake another 10-12 minutes until golden and cooked through. Let cool completely.
- Make the Vanilla Mascarpone Cream: In a mixing bowl, whisk mascarpone cheese until smooth. In a separate bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form. Gently fold whipped cream into mascarpone until fully combined and creamy.
- Assemble the Tart: Spread the mascarpone cream evenly into the cooled tart crust. Arrange the fresh fruit on top in a decorative pattern, alternating colors and shapes for visual appeal.
- Glaze the Fruit: In a small saucepan, heat apricot jam with water until melted and smooth. Allow to cool slightly, then brush the glaze gently over the fruit to add shine and help preserve freshness.
- Chill and Serve: Refrigerate the tart for at least 1 hour to allow flavors to meld and cream to set. Slice and serve chilled for the best texture and flavor.
