Ingredients

For the Chicken

  • 12 ounces fettuccine pasta

Instructions

  1. Prepare the chicken: Season the chicken breasts with olive oil, garlic powder, salt, and pepper on both sides. Preheat a grill or grill pan over medium-high heat. Grill the chicken for 6-7 minutes per side or until cooked through and juices run clear. Remove from heat and let rest.
  2. Cook the pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente, usually about 10-12 minutes. Drain and set aside, reserving a little pasta water.
  3. Make the Alfredo sauce: In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté until fragrant, about 1-2 minutes, taking care not to burn the garlic. Slowly pour in the heavy cream, whisking constantly. Bring to a gentle simmer and cook for 5 minutes until slightly thickened. Stir in the Parmesan cheese until fully melted and smooth. Season with salt and pepper to taste.
  4. Combine pasta and sauce: Add the cooked fettuccine to the skillet with the Alfredo sauce. Toss gently to coat the pasta evenly. If the sauce is too thick, add reserved pasta water a tablespoon at a time until desired consistency is reached.
