  • 2 pounds carrots, washed and halved

Cheese and Toppings

  • 1/4 cup Parmesan cheese, grated
  • 2 tablespoons Panko breadcrumbs (or normal breadcrumbs)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Lightly grease or spray a baking sheet with cooking oil spray to prevent sticking.
  2. Prepare Carrots: Place the washed and halved carrots onto the prepared baking sheet, ensuring they are spaced out for even roasting.
  3. Mix Ingredients: Add olive oil, minced garlic, grated Parmesan cheese, Panko breadcrumbs, salt, and pepper over the carrots. Toss everything together thoroughly to coat each carrot piece evenly with the mixture.
