- Mix dry ingredients: In a medium bowl, sift together the flour, ground ginger, baking soda, cinnamon, cloves, and salt to combine all the spices evenly with the flour.
- Cream butter and sugar: In a large bowl, using an electric mixer, cream the softened butter and 1 cup of granulated sugar until light and fluffy, which usually takes about 3-4 minutes. This step helps create a tender texture.
- Add egg and molasses: Beat in the egg, then stir in the water and molasses until the mixture is smooth and fully incorporated.
- Combine wet and dry: Gradually add the dry ingredient mixture to the wet ingredients, mixing just until combined. Avoid overmixing to keep the cookies tender.
