Ingredients
For the Gluten Free Sponge Cake
- 1 cup gluten-free all-purpose flour blend
- 1/2 cup granulated sugar
- 4 large eggs, separated
- 1 teaspoon vanilla extract
- 1/2 teaspoon xanthan gum (if not included in flour blend)
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder (gluten-free)
For the Chantilly Cream
- 1 1/2 cups heavy whipping cream, chilled
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
For the Berry Topping
- 1 cup fresh strawberries, hulled and sliced
- 1 cup fresh blueberries
- 1 cup fresh raspberries
- 1 tablespoon powdered sugar (optional, for dusting berries)
Instructions
- Prepare the Sponge Cake Batter: Preheat your oven to 350°F (175°C). In a mixing bowl, whisk together the gluten-free flour blend, xanthan gum, salt, and baking powder. In a separate large bowl, beat the egg yolks with half the sugar until pale and creamy, then stir in vanilla extract.
- Beat the Egg Whites: Using a clean mixer bowl, beat the egg whites until soft peaks form. Gradually add the remaining sugar while continuing to beat until stiff peaks form. This will help give the cake its light texture.
- Combine Batter: Gently fold the dry ingredients into the egg yolk mixture. Then carefully fold in the egg whites in batches, making sure not to deflate the mixture to maintain airiness.
- Bake the Cake: Pour the batter into a greased and parchment-lined 8-inch round cake pan. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely in the pan on a wire rack.
- Prepare Chantilly Cream: In a chilled mixing bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form. Be careful not to overbeat and turn it into butter.
- Assemble the Cake: Once the cake has fully cooled, slice it horizontally into two even layers. Spread a generous layer of Chantilly cream over the bottom layer, then evenly distribute a mix of the fresh berries on top. Place the second cake layer over the berries and spread more Chantilly cream on top and sides.
- Decorate: Arrange the remaining fresh berries on top of the cake as a decorative and tasty garnish. Optionally, dust with a little powdered sugar for a finishing touch.
- Chill and Serve: Refrigerate the assembled cake for at least 1 hour before serving to let the flavors meld and cream set. Slice and enjoy this refreshing, gluten-free dessert!
