Bread and Cheese
- 2 slices of artisan sourdough bread
- 2 tablespoons unsalted butter, softened
- 1/4 cup shredded Gruyère cheese
- 1/4 cup shredded sharp white cheddar cheese
Mushroom Filling
- 1 cup cremini mushrooms, cleaned and thinly sliced
- 1 clove garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon fresh thyme leaves
- Salt, to taste
- Freshly ground black pepper, to taste
Instructions
- Prepare the Mushroom Filling: Heat olive oil in a skillet over medium heat. Add the sliced mushrooms and sauté for about 5 minutes until they release their moisture and start to brown. Add minced garlic and thyme leaves, cooking for an additional 1-2 minutes until fragrant. Season with salt and pepper to taste. Remove from heat.
- Assemble the Sandwich: Butter one side of each slice of bread. Place one slice, buttered side down, on a clean skillet or griddle over medium-low heat. Evenly distribute the mushroom mixture over the bread, then sprinkle the shredded Gruyère and sharp cheddar on top. Cover with the second slice of bread, buttered side up.
- Cook the Sandwich: Cook the sandwich slowly for about 3-4 minutes until the bottom bread is golden brown and the cheese starts melting. Carefully flip the sandwich using a spatula and cook the other side for another 3-4 minutes until golden brown and the cheese is fully melted.
- Serve Hot: Remove the sandwich from the skillet and let it sit for a minute before slicing. This helps the cheese set slightly so it doesn’t spill out. Cut the sandwich diagonally and serve immediately while warm and gooey.
