Description

A vibrant and flavorful Greek Lemon Chicken with Feta recipe featuring tender chicken thighs marinated in a zesty lemon-garlic sauce, baked to perfection with juicy tomatoes, olives, and creamy feta cheese. This dish brings together classic Mediterranean ingredients for a hearty yet light meal perfect for weeknight dinners or entertaining guests.

Ingredients

For the Chicken Marinade

  • 6 bone-in, skin-on chicken thighs
  • 3 tablespoons olive oil
  • Juice of 2 lemons (about 1/4 cup)
  • 4 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Bake

  • 1 cup cherry tomatoes, halved
  • 1/2 cup pitted Kalamata olives
  • 1/2 cup crumbled feta cheese
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Marinade: In a large bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper until well combined, creating a flavorful marinade.
  2. Marinate the Chicken: Add the chicken thighs to the marinade, turning to coat each piece thoroughly. Cover and refrigerate for at least 30 minutes, allowing the flavors to infuse the chicken.
  3. Preheat the Oven: Set your oven to 400°F (200°C) to prepare for baking the chicken dish.
  4. Arrange Chicken and Vegetables: Place the marinated chicken thighs skin-side up in a single layer in a baking dish. Scatter the halved cherry tomatoes and Kalamata olives evenly around the chicken pieces.
  5. Bake the Chicken: Bake uncovered for 35-40 minutes, or until the chicken skin is golden and the internal temperature reaches 165°F (74°C). The tomatoes will soften and release juices, blending with the marinade flavors.
  6. Add Feta Cheese: During the last 5 minutes of baking, sprinkle crumbled feta cheese over the chicken and vegetables. Return to the oven to gently melt and slightly brown the cheese.
  7. Garnish and Serve: Remove the baking dish from the oven, garnish with chopped fresh parsley, and serve hot with your favorite side like Greek lemon potatoes or a green salad.

Notes

  • Marinate the chicken overnight for an even more intense citrus and garlic flavor.
  • Bone-in chicken thighs retain juiciness and enhance flavor during baking.
  • Use full-fat feta for creamy texture and authentic taste.
  • Pair this dish with crusty bread to soak up the delicious sauce.
  • Leftovers can be refrigerated for up to 3 days and taste great reheated.
