Instructions

  1. Cook Sausage Mixture: In a large skillet over medium heat, cook the ground sausage until browned and cooked through, about 6-8 minutes. Add the chopped onion, garlic, and diced green chiles, cooking for an additional 3-4 minutes until the vegetables soften. Drain any excess fat and set aside.
  2. Prepare Egg Mixture: In a large mixing bowl, whisk together the eggs, whole milk, salt, and pepper until fully combined and slightly frothy to incorporate air for fluffiness.
  3. Assemble Casserole: Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish with cooking spray or butter. Spread the cooked sausage and chile mixture evenly over the bottom of the dish. Sprinkle half of the shredded cheddar and Monterey Jack cheeses over the sausage layer.
