Description

This Grilled Mango, Tomato, and Burrata Platter is a refreshing and elegant appetizer that combines the natural sweetness of grilled mango with juicy ripe tomatoes and creamy burrata cheese. Enhanced with fresh basil, a drizzle of balsamic glaze, and extra virgin olive oil, it’s a perfect dish to impress guests or enjoy a light, healthy snack during warm weather.

Ingredients

Produce

  • 2 ripe mangoes, peeled and sliced
  • 2 cups cherry tomatoes, halved
  • 1 cup fresh basil leaves
  • 1 lemon, juiced

Dairy

  • 8 oz burrata cheese

Pantry

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic glaze
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Prepare the grill: Preheat your grill or grill pan to medium-high heat to ensure it is hot enough for grilling the mango slices.
  2. Grill the mango: Lightly brush the mango slices with olive oil to prevent sticking. Place the mango slices on the grill and cook for about 2-3 minutes per side, until grill marks appear and the fruit is slightly softened but not mushy. Remove and let cool.
  3. Assemble the platter: Arrange the grilled mango slices and halved cherry tomatoes on a serving dish. Tear the burrata cheese into large chunks and place it evenly around the platter.
  4. Add basil and seasoning: Scatter fresh basil leaves over the mango, tomatoes, and burrata. Season the platter with salt and freshly ground black pepper to your taste.
  5. Dress the platter: Drizzle extra virgin olive oil and balsamic glaze generously over the entire platter, followed by a squeeze of fresh lemon juice to add brightness and balance the flavors.
  6. Serve: Serve immediately as a fresh appetizer or side dish with crusty bread or crackers if desired.

Notes

  • Use ripe but firm mangoes to hold their shape well on the grill.
  • For a smoky flavor, consider adding a touch of smoked sea salt instead of regular salt.
  • Burrata is delicate; handle gently to keep its creamy texture intact.
  • Balsamic glaze can be substituted with a good quality aged balsamic vinegar if glaze is unavailable.
  • Can be served as a light vegetarian appetizer suitable for summer gatherings.
