Ingredients
Salad Ingredients
- 4 ripe peaches (halved and pitted)
- 6 cups mixed greens (such as arugula or spinach)
- 1 cup feta cheese (crumbled)
- 1/2 cup walnuts (toasted)
Dressing and Seasoning
- 1/4 cup balsamic vinaigrette
- 2 tablespoons olive oil
- Salt (to taste)
- Pepper (to taste)
Instructions
- Preheat Grill: Preheat your grill to medium heat to ensure it is ready for grilling the peaches.
- Prepare Peaches: Brush the cut sides of the peach halves with olive oil and season with salt and pepper to enhance the flavor.
- Grill Peaches: Place peaches cut-side down on the grill and cook for 3-4 minutes until grill marks appear and the peaches are slightly softened.
- Cool and Slice Peaches: Remove the grilled peaches from the grill and allow them to cool. Once cooled, slice them into wedges for easy mixing.
- Combine Salad Ingredients: In a large bowl, combine the mixed greens, crumbled feta cheese, and toasted walnuts.
- Add Grilled Peaches and Dressing: Gently add the grilled peach wedges to the salad bowl and drizzle with the balsamic vinaigrette.
- Toss and Serve: Toss the salad gently to combine all ingredients well, then serve immediately for the freshest flavors.
Notes
- Use ripe but firm peaches to prevent them from becoming mushy on the grill.
- To toast walnuts, place them in a dry skillet over medium heat for 5-7 minutes, stirring occasionally until fragrant.
- Customize the salad by adding a handful of fresh herbs such as basil or mint for extra flavor.
- For a vegan version, substitute feta cheese with vegan cheese or omit it entirely.
- Serve the salad immediately after tossing to keep the greens crisp and fresh.
