Ingredients
For the Steak and Vegetables
- 1 lb flank steak or sirloin steak
- 2 medium zucchinis, sliced
- 2 tbsp olive oil
- Salt and freshly ground black pepper, to taste
For the Creamy Sauce
- 1/4 cup Greek yogurt or sour cream
- 1 tbsp mayonnaise
- 1 clove garlic, minced
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- Salt and pepper, to taste
For Serving
- Cooked rice or quinoa, 2 cups
- Fresh herbs (such as parsley or cilantro), chopped (optional)
Instructions
- Prepare the Steak: Season the steak generously on both sides with salt and black pepper. Let it rest at room temperature for 15-20 minutes to absorb flavors and cook evenly.
- Grill the Steak: Preheat your grill or grill pan over medium-high heat. Brush the steak with 1 tablespoon olive oil. Place the steak on the grill and cook for about 4-5 minutes per side or until your desired doneness is reached. Remove from the grill and let it rest for 5-10 minutes before slicing thinly against the grain.
- Cook the Zucchini: Toss the sliced zucchini with the remaining olive oil, salt, and pepper. Grill the zucchini slices for 2-3 minutes per side until tender and marked with grill lines.
- Make the Creamy Sauce: In a small bowl, whisk together Greek yogurt, mayonnaise, minced garlic, lemon juice, Dijon mustard, salt, and pepper until well combined and smooth. Adjust seasoning to taste.
- Assemble the Bowl: In serving bowls, layer cooked rice or quinoa, grilled zucchini, and sliced steak. Drizzle with the creamy sauce and sprinkle with fresh herbs if using. Serve immediately.
Notes
- Use flank or sirloin steak for best grilling results and tenderness.
- Tip: Letting steak rest after grilling ensures juicy slices.
- For a low-carb option, substitute rice or quinoa with cauliflower rice.
- The creamy sauce can be prepared in advance and stored refrigerated for up to 2 days.
- Adjust seasoning and lemon juice in the sauce to your taste preference.
