Ingredients
Crust
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
Cheesecake Filling
- 16 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/2 cup sour cream
Toppings
- Candy eyeballs
- Orange and black sprinkles
- Optional: Halloween-themed candies or chocolate shards
Instructions
- Prepare the Crust: In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until crumbs are evenly coated and resemble wet sand.
- Assemble the Base: Spoon about 2 tablespoons of the crumb mixture into the bottom of each serving cup. Press down gently to form an even crust layer.
- Make the Cheesecake Filling: Using a mixer, beat softened cream cheese until smooth and creamy. Gradually add sugar and continue mixing until well combined. Beat in vanilla extract. Add eggs one at a time, mixing well after each addition. Finally, fold in sour cream until the mixture is uniform.
- Fill the Cups: Spoon the cheesecake filling over the crust in each cup, filling almost to the top for a generous portion.
- Bake the Cheesecake Cups: Place the filled cups on a baking tray and bake in a preheated oven at 325°F (163°C) for about 20-25 minutes, or until the edges are set and the centers slightly jiggle.
- Cool and Chill: Allow the cheesecake cups to cool to room temperature, then refrigerate for at least 4 hours or overnight to set completely.
- Decorate: Just before serving, decorate each cheesecake cup with candy eyeballs, orange and black sprinkles, and any other Halloween-themed decorations you prefer.
Notes
- Ensure the cream cheese is fully softened to avoid lumps in the filling.
- For an extra spooky touch, add a drop of orange food coloring to the cheesecake batter before baking.
- Use sturdy cups that can safely go into the oven, such as oven-safe glass or ceramic ramekins.
- Leftover cheesecake cups can be stored covered in the refrigerator for up to 3 days.
- Feel free to customize toppings to your liking with crushed Oreos or edible glitter.
