Instructions
- Prepare Dry Ingredients: In a medium bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
- Cream Butter and Sugar: In a large mixing bowl, beat the butter and sugar on medium speed until light and fluffy, about 3-4 minutes.
- Add Eggs and Vanilla: Beat in the eggs one at a time, then stir in the vanilla extract until combined.
- Combine Wet and Dry Ingredients: Alternately add the flour mixture and buttermilk to the butter mixture, beginning and ending with the flour mixture. Mix each addition just until incorporated.
- Add Hot Water: Carefully stir in the hot water; the batter will be thin but that’s correct.
- Bake Cupcakes: Divide the batter evenly into a prepared cupcake pan with liners, filling each about two-thirds full. Bake in a preheated oven at 350°F (175°C) for 18-22 minutes or until a toothpick inserted near the center comes out clean.
- Cool Completely: Remove cupcakes from oven and allow them to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
- Make Frosting: In a bowl, beat the softened butter until creamy. Gradually add powdered sugar, mixing well after each addition. Add heavy cream, vanilla, and salt, and beat until fluffy and smooth.
