Description

Celebrate Halloween with these spooky and delicious Vampire Bite Cupcakes. These moist chocolate cupcakes are topped with creamy red velvet frosting and decorated with bite marks and dripping ‘blood’ to create a hauntingly fun treat perfect for parties or festive gatherings.

Ingredients

Cupcakes

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk

Red Velvet Frosting

  • 1/2 cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon red food coloring

Decoration

  • Red gel icing or strawberry syrup (for blood effect)
  • White candy melts or white chocolate chips (for fang marks)

Instructions

  1. Prepare Cupcake Batter: Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners. In a bowl, sift together flour, cocoa powder, baking powder, baking soda, and salt. In a separate large bowl, cream the softened butter and granulated sugar until light and fluffy. Beat in eggs one at a time, then add vanilla extract. Alternate adding the dry ingredients and buttermilk to the butter mixture, beginning and ending with the dry ingredients, mixing just until combined.
  2. Bake Cupcakes: Divide the batter evenly among the cupcake liners, filling each about 2/3 full. Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center comes out clean. Remove from oven and allow cupcakes to cool completely on a wire rack before frosting.
  3. Make Frosting: In a large bowl, beat softened butter and cream cheese together until smooth and creamy. Gradually add powdered sugar and continue to beat until fluffy. Mix in vanilla extract and red food coloring until evenly blended and vibrant red in color.
  4. Frost Cupcakes: Using a piping bag or spatula, apply the red velvet frosting generously on each cooled cupcake, creating a smooth or swirled top.
  5. Create Vampire Bite Decoration: Attach two small white candy melts or white chocolate chips side by side on the frosting edge to resemble vampire fangs. Then use red gel icing or strawberry syrup to drip ‘blood’ around the fangs and onto the sides of the cupcake to give a fresh bite effect.
  6. Serve and Enjoy: Arrange the decorated cupcakes on a platter and serve immediately or refrigerate until ready to serve. Allow to come to room temperature before eating for best flavor and texture.

Notes

  • You can substitute buttermilk with 1/2 cup milk plus 1 teaspoon vinegar or lemon juice, let sit for 5 minutes.
  • For a vegan version, use plant-based butter and cream cheese alternatives, and substitute eggs with flax eggs.
  • Red gel icing can be found in most grocery stores or online specialty baking supply shops.
  • Store cupcakes in an airtight container in the refrigerator for up to 3 days.
  • Allow refrigerated cupcakes to sit at room temperature for 20 minutes before serving.
