Instructions

- Roast the Vegetables: Preheat your oven to 400°F (200°C). Toss the sweet potatoes, Brussels sprouts, and red onions with a drizzle of olive oil, salt, and pepper to taste. Spread them evenly on a baking sheet and roast for 25-30 minutes until the vegetables are tender and beautifully golden, flipping halfway through to ensure even cooking.
- Prepare the Tahini Dressing: In a small bowl, whisk together tahini, fresh lemon juice, maple syrup, minced garlic, and a pinch of salt. Gradually add warm water, one tablespoon at a time, mixing until the dressing reaches a smooth, pourable consistency.
