Wholesome and naturally sweet berry streusel bars with a juicy fruit layer and a crumbly oat topping, perfect for a healthy snack or breakfast.
Ingredients
- 1 1/2 cups rolled oats
- 1 cup whole wheat flour or all-purpose flour
- 1/3 cup honey or maple syrup
- 1/3 cup coconut oil or butter, melted
- 1/3 cup brown sugar or coconut sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 cups mixed berries (fresh or frozen)
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and line a baking pan with parchment paper.
- In a bowl, mix oats, flour, baking powder, salt, and sugar.
- Add melted coconut oil and honey or maple syrup, stirring until crumbly.
- Press two-thirds of the mixture firmly into the bottom of the pan to form the base.
- In another bowl, mix berries with lemon juice and vanilla extract.
- Spread the berry mixture evenly over the base.
- Sprinkle the remaining oat mixture on top as the streusel.
- Bake for 30–35 minutes until golden and bubbly.
- Cool completely before cutting into bars.
Notes
- Use frozen berries directly, adding a few extra minutes to baking time.
- Press the base firmly to prevent crumbling.
- Add nuts or seeds for extra crunch.
- Swap berries with apples, peaches, or other fruits.
- Store in the fridge for best freshness.
