Description

Wholesome and naturally sweet berry streusel bars with a juicy fruit layer and a crumbly oat topping, perfect for a healthy snack or breakfast.


Ingredients

  • 1 1/2 cups rolled oats
  • 1 cup whole wheat flour or all-purpose flour
  • 1/3 cup honey or maple syrup
  • 1/3 cup coconut oil or butter, melted
  • 1/3 cup brown sugar or coconut sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups mixed berries (fresh or frozen)
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking pan with parchment paper.
  2. In a bowl, mix oats, flour, baking powder, salt, and sugar.
  3. Add melted coconut oil and honey or maple syrup, stirring until crumbly.
  4. Press two-thirds of the mixture firmly into the bottom of the pan to form the base.
  5. In another bowl, mix berries with lemon juice and vanilla extract.
  6. Spread the berry mixture evenly over the base.
  7. Sprinkle the remaining oat mixture on top as the streusel.
  8. Bake for 30–35 minutes until golden and bubbly.
  9. Cool completely before cutting into bars.

Notes

  • Use frozen berries directly, adding a few extra minutes to baking time.
  • Press the base firmly to prevent crumbling.
  • Add nuts or seeds for extra crunch.
  • Swap berries with apples, peaches, or other fruits.
  • Store in the fridge for best freshness.
