Description

A comforting and flavorful Chinese Noodle Soup featuring tender noodles in a savory broth enriched with aromatic vegetables, ginger, garlic, and soy sauce, perfect for a quick and satisfying meal.

Ingredients

Broth Ingredients

  • 6 cups chicken or vegetable broth
  • 2 cloves garlic, minced
  • 1 inch piece of ginger, sliced
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tsp sugar
  • Salt, to taste
  • Black pepper, to taste

Noodle and Toppings

  • 200g Chinese egg noodles or ramen noodles
  • 2 green onions, sliced
  • 1 cup bok choy or baby spinach
  • 1 medium carrot, julienned
  • Optional: cooked chicken slices, tofu cubes, or boiled eggs for protein

Instructions

  1. Prepare the Broth: In a large pot over medium heat, add the sesame oil and sauté the minced garlic and sliced ginger until fragrant, about 1-2 minutes, taking care not to burn them.
  2. Add Broth and Seasonings: Pour in the chicken or vegetable broth, soy sauce, rice vinegar, and sugar. Stir well and bring the broth to a gentle boil.
  3. Simmer the Broth: Reduce the heat to low and let the broth simmer for 10-15 minutes to develop the flavors, allowing the ginger and garlic to infuse the soup.
  4. Cook the Noodles: While the broth simmers, cook the noodles separately in boiling water according to package instructions until al dente, then drain and set aside.
  5. Add Vegetables: Add the julienned carrot and bok choy or spinach to the simmering broth and cook for 2-3 minutes until tender but still vibrant.
  6. Assemble the Soup: Divide the cooked noodles into serving bowls, ladle the hot broth and vegetables over the noodles, then garnish with sliced green onions and optional protein such as chicken, tofu, or boiled eggs.
  7. Serve Immediately: Serve the soup hot, optionally with a drizzle of chili oil or extra soy sauce to taste.

Notes

  • Use fresh ginger and garlic for the best flavor impact in the broth.
  • The soup can be customized with your favorite vegetables or proteins like shrimp, beef strips, or mushrooms.
  • For a vegetarian version, use vegetable broth and tofu as protein.
  • Adjust soy sauce and salt quantities according to your taste preference and dietary restrictions.
  • Leftover broth can be stored in the refrigerator for up to 3 days.
