Instructions
- Prepare the Ingredients: Rinse the lentils thoroughly under cold running water until the water runs clear to remove any debris. Finely chop the onion, dice the carrots and celery, and mince the garlic cloves.
- Sauté the Vegetables: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the onion, carrots, and celery, and cook, stirring occasionally, until the vegetables are softened and the onion becomes translucent, about 5 to 7 minutes. Add the minced garlic and cook for an additional minute until fragrant.
- Add Spices and Lentils: Stir in the ground cumin, paprika, and dried thyme, cooking for about 30 seconds to release their aroma. Then add the rinsed lentils to the pot and stir to combine with the vegetable and spice mixture.
- Add Liquids and Tomatoes: Pour in the vegetable broth and the canned diced tomatoes with their juices. Stir well to combine, scraping any browned bits off the bottom of the pot to incorporate flavor.
