- 3 garlic cloves, minced

Instructions
- Prepare the spatchcock chicken: Using kitchen shears, remove the backbone of the whole chicken by cutting along both sides. Flip the chicken breast side up and press down firmly on the breastbone to flatten the bird evenly for uniform roasting.
- Make the herb butter: In a small bowl, combine softened butter, minced garlic, lemon zest, chopped parsley, thyme, rosemary, salt, and black pepper. Mix well until all herbs and seasonings are incorporated.
- Apply herb butter: Gently loosen the skin of the chicken by sliding your fingers between the skin and the meat, especially over the breast and thighs. Spread about half of the herb butter underneath the skin to coat the meat, and rub the remaining butter evenly over the outside skin.
- Roast the chicken: Preheat the oven to 425°F (220°C). Place the prepared chicken on a rimmed baking sheet or roasting pan, skin side up. Roast for 40 to 45 minutes, or until the skin is golden brown and an instant-read thermometer inserted into the thickest part of the thigh reads 165°F (74°C).
