Instructions

  1. Prepare the Marshmallows: Insert a wooden popsicle stick into each marshmallow, pushing it about halfway through so the marshmallow is securely held on the stick.
  2. Melt the Chocolate: In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Microwave in 30-second intervals, stirring thoroughly between each, until the chocolate is completely melted and smooth.
  3. Coat the Marshmallows: Dip each marshmallow into the melted chocolate, using a spoon if necessary to fully cover all sides. Allow excess chocolate to drip back into the bowl.
  4. Roll in Graham Cracker Crumbs: Immediately after coating with chocolate, roll the marshmallow in the graham cracker crumbs until evenly covered. For added fun, sprinkle with colored or Halloween-themed decorations while the chocolate is still wet.
  5. Set the Pops: Place the coated marshmallow pops upright in a Styrofoam block or on a parchment-lined tray. Refrigerate for at least 20–30 minutes, or until the chocolate has hardened completely.
