Description

This Homemade Cherry Crisp is a luscious dessert featuring fresh or frozen cherries topped with a buttery, crunchy oat and almond streusel. Easy to prepare and perfect for showcasing juicy cherries, it offers a delightful balance of tart fruit and sweet, crispy topping that makes a comforting treat for any occasion.

Ingredients

Filling

  • 6 cups pitted fresh or frozen tart cherries
  • 3/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon almond extract

Topping

  • 1 cup all-purpose flour
  • 1 cup old-fashioned rolled oats
  • 1/2 cup sliced almonds
  • 3/4 cup packed light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted

Instructions

  1. Prepare the Filling: In a large bowl, combine the pitted cherries, granulated sugar, cornstarch, lemon juice, and almond extract. Stir well to evenly coat the cherries, then set aside to macerate while you prepare the topping.
  2. Make the Topping: In another bowl, mix together the flour, rolled oats, sliced almonds, brown sugar, cinnamon, and salt. Pour in the melted butter and stir until the mixture is crumbly and evenly moistened.
  3. Assemble the Crisp: Preheat your oven to 350°F (175°C). Transfer the cherry filling into a 9×13 inch baking dish, spreading it out evenly. Sprinkle the oat and almond topping evenly over the cherries.
  4. Bake: Place the crisp in the preheated oven and bake for 40 to 45 minutes, or until the topping is golden brown and the filling is bubbling around the edges.
  5. Cool and Serve: Remove from the oven and allow to cool for at least 15 minutes to let the filling set. Serve warm, optionally with vanilla ice cream or whipped cream for an extra indulgence.

Notes

  • For best results, use tart cherries which provide a nice balance of sweetness and tartness.
  • If using frozen cherries, do not thaw before mixing; this will help keep the filling from becoming too watery.
  • The topping can be made ahead and stored in the refrigerator for up to 2 days.
  • Almond extract intensifies the cherry flavor but can be omitted if unavailable.
  • Leftovers store well in the refrigerator for 3-4 days and can be reheated in the oven.
