Ingredients
Main Ingredients
- 1/2 cup unsweetened cocoa powder
- 1/3 cup granulated sugar
- 1 tablespoon cornstarch
- a pinch of sea salt
- 1 3/4 cups whole milk (or 1 can (13.5 ounce) full-fat coconut milk)
- 1/4 cup heavy cream
- 1/4 cup semi-sweet chocolate, coarsely chopped
- 1/2 teaspoon vanilla extract
Optional Toppings
- Melted chocolate for drizzling
- Chopped nuts
- Mini chocolate chips
- Shredded coconut
- Crushed cookies
- Colorful sprinkles
Instructions
- Combine dry ingredients: In a medium saucepan, whisk together the unsweetened cocoa powder, granulated sugar, cornstarch, and sea salt until evenly combined.
- Add milk gradually: Slowly pour in the whole milk (or coconut milk) while whisking continuously until the mixture is smooth and free of lumps.
- Heat mixture: Place the saucepan over medium-low heat and whisk constantly as the mixture heats. Continue until it begins to simmer and slightly thickens, about 4-5 minutes, ensuring it does not boil.
- Incorporate cream and chocolate: Remove the pan from heat and stir in the heavy cream, chopped semi-sweet chocolate, and vanilla extract. Mix until the chocolate is fully melted and the mixture becomes smooth and glossy.
- Cool the mixture: Allow the fudgesicle base to cool for 10-15 minutes to reach a temperature suitable for freezing.
- Pour into molds: Pour the cooled mixture into popsicle molds, leaving some space at the top to accommodate expansion during freezing. Insert the popsicle sticks.
- Freeze: Place the molds in the freezer for at least 6 hours or preferably overnight, until fully solidified.
- Release fudgesicles: To remove the fudgesicles, run the molds under warm water for 15-20 seconds to loosen them, then gently pull the popsicles out. Serve immediately.
- Add toppings (optional): For an extra special treat, drizzle the fudgesicles with melted chocolate and sprinkle with your choice of chopped nuts, mini chocolate chips, shredded coconut, crushed cookies, or colorful sprinkles.
- Set toppings: Let the chocolate drizzle set for a minute or two before serving for best presentation and texture.
Notes
- You can substitute whole milk with full-fat coconut milk for a dairy-free variation.
- Do not let the cocoa mixture boil as it may cause lumps and affect the texture.
- Ensure mixture is cool before freezing to help achieve smooth fudgesicles.
- Run molds under warm water briefly to help release the fudgesicles cleanly.
- Customize toppings as desired for variety and extra flavor.
