Description

These homemade fudgesicles are a creamy, chocolatey frozen treat made from scratch using cocoa powder, milk, and chocolate. Perfect for satisfying your sweet tooth on a hot day, they are rich yet simple to prepare and can be customized with your favorite toppings.

Ingredients

Main Ingredients

  • 1/2 cup unsweetened cocoa powder
  • 1/3 cup granulated sugar
  • 1 tablespoon cornstarch
  • a pinch of sea salt
  • 1 3/4 cups whole milk (or 1 can (13.5 ounce) full-fat coconut milk)
  • 1/4 cup heavy cream
  • 1/4 cup semi-sweet chocolate, coarsely chopped
  • 1/2 teaspoon vanilla extract

Optional Toppings

  • Melted chocolate for drizzling
  • Chopped nuts
  • Mini chocolate chips
  • Shredded coconut
  • Crushed cookies
  • Colorful sprinkles

Instructions

  1. Combine dry ingredients: In a medium saucepan, whisk together the unsweetened cocoa powder, granulated sugar, cornstarch, and sea salt until evenly combined.
  2. Add milk gradually: Slowly pour in the whole milk (or coconut milk) while whisking continuously until the mixture is smooth and free of lumps.
  3. Heat mixture: Place the saucepan over medium-low heat and whisk constantly as the mixture heats. Continue until it begins to simmer and slightly thickens, about 4-5 minutes, ensuring it does not boil.
  4. Incorporate cream and chocolate: Remove the pan from heat and stir in the heavy cream, chopped semi-sweet chocolate, and vanilla extract. Mix until the chocolate is fully melted and the mixture becomes smooth and glossy.
  5. Cool the mixture: Allow the fudgesicle base to cool for 10-15 minutes to reach a temperature suitable for freezing.
  6. Pour into molds: Pour the cooled mixture into popsicle molds, leaving some space at the top to accommodate expansion during freezing. Insert the popsicle sticks.
  7. Freeze: Place the molds in the freezer for at least 6 hours or preferably overnight, until fully solidified.
  8. Release fudgesicles: To remove the fudgesicles, run the molds under warm water for 15-20 seconds to loosen them, then gently pull the popsicles out. Serve immediately.
  9. Add toppings (optional): For an extra special treat, drizzle the fudgesicles with melted chocolate and sprinkle with your choice of chopped nuts, mini chocolate chips, shredded coconut, crushed cookies, or colorful sprinkles.
  10. Set toppings: Let the chocolate drizzle set for a minute or two before serving for best presentation and texture.

Notes

  • You can substitute whole milk with full-fat coconut milk for a dairy-free variation.
  • Do not let the cocoa mixture boil as it may cause lumps and affect the texture.
  • Ensure mixture is cool before freezing to help achieve smooth fudgesicles.
  • Run molds under warm water briefly to help release the fudgesicles cleanly.
  • Customize toppings as desired for variety and extra flavor.
