Ingredients
For the Chicken Marinade
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 3 tbsp honey
- 2 tbsp fresh lime juice (about 1 lime)
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1/2 tsp chili powder
- Salt and pepper to taste
- 2 tbsp olive oil
For the Rice Bowls
- 2 cups cooked white or brown rice
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels, fresh or thawed from frozen
- 1 avocado, sliced
- 1/2 cup fresh cilantro, chopped
- 1/4 cup red onion, finely diced
- 1 lime, cut into wedges for serving
- Sour cream or Greek yogurt, optional for topping
Instructions
- Prepare the marinade: In a medium bowl, whisk together the honey, lime juice, minced garlic, ground cumin, chili powder, salt, pepper, and olive oil until well combined.
- Marinate the chicken: Add the bite-sized chicken pieces to the marinade, tossing to coat evenly. Cover and refrigerate for at least 30 minutes, preferably up to 1 hour, to allow the flavors to meld.
- Cook the chicken: Heat a large skillet over medium-high heat. Add the marinated chicken pieces and cook for 5-7 minutes, stirring occasionally, until the chicken is cooked through and slightly caramelized on the edges.
- Prepare the rice bowls: While the chicken cooks, warm the cooked rice, beans, and corn, either by microwaving or heating gently in a saucepan.
- Assemble the bowls: Divide the rice evenly between bowls. Top with cooked chicken, black beans, corn, sliced avocado, diced red onion, and chopped cilantro.
- Garnish and serve: Squeeze fresh lime juice over each bowl and add a dollop of sour cream or Greek yogurt if desired. Serve immediately for best flavor.
Notes
- For extra heat, add a pinch of crushed red pepper flakes to the marinade.
- Use brown rice for a higher fiber option.
- Chicken thighs can be used instead of breasts for juicier results.
- Leftovers store well in the refrigerator for up to 3 days.
