Ingredients
For the Chicken and Marinade
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 3 tablespoons honey
- 2 tablespoons fresh lime juice

Instructions
- Prepare the Marinade: In a medium bowl, whisk together honey, lime juice, minced garlic, olive oil, ground cumin, chili powder, salt, and pepper to create the marinade.
- Marinate the Chicken: Add the cut chicken pieces to the marinade, tossing well to coat. Let it sit for at least 15 minutes to absorb the flavors.
- Cook the Rice: Rinse the rice under cold water until the water runs clear. In a medium saucepan, combine rice, water or chicken broth, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 18 minutes or until the rice is tender and liquid is absorbed. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.
- Cook the Chicken: Heat a large skillet over medium-high heat. Add the marinated chicken along with the marinade to the skillet. Cook, stirring occasionally, for 6 to 8 minutes or until the chicken is cooked through and slightly caramelized. Remove from heat.
- Prepare the Veggies: While the chicken cooks, halve the cherry tomatoes, dice the avocado, chop cilantro and red onion, and prepare the corn kernels.
