Description

A fresh and vibrant Italian Tomato Salad featuring a colorful mix of Campari and cherry tomatoes, seasoned with aromatic herbs and a simple olive oil dressing. Perfect as a light appetizer or side dish, this salad highlights the natural sweetness of fresh tomatoes enhanced by garlic, shallots, basil, and oregano.

Ingredients

Tomatoes

  • 1 pound Campari tomatoes (or heirloom, Roma, or beefsteak)
  • 10 ounces cherry tomatoes (or grape tomatoes, or other small tomatoes)

Seasoning and Dressing

  • 1/2 teaspoon sea salt
  • 3 tablespoons olive oil
  • 1 shallot, thinly sliced
  • 1 garlic clove, finely minced
  • 15 basil leaves, chopped
  • 2 sprigs oregano, chopped

Instructions

  1. Prepare Tomatoes: Slice the Campari tomatoes into rounds and cut the smaller cherry tomatoes in half or thirds. Arrange them in a large serving dish and sprinkle evenly with sea salt to start the seasoning process.
  2. Make Dressing: In a small mixing bowl, combine the olive oil, thinly sliced shallot, finely minced garlic, chopped basil leaves, and chopped oregano. Stir well until all ingredients are blended into a fragrant dressing.
  3. Toss Salad: Drizzle the prepared olive oil herb mixture over the salted tomatoes. Gently toss to ensure each tomato piece is fully coated with the flavorful dressing.
  4. Serve or Marinate: Serve the salad immediately for a fresh taste, or allow it to marinate at room temperature for 30 minutes up to 2 hours to deepen the flavors before serving.

Notes

  • Use ripe, flavorful tomatoes for the best taste.
  • The salad can be served immediately or marinated to intensify flavors.
  • Try substituting herbs based on preference, such as adding fresh thyme or parsley.
  • Serve chilled or at room temperature according to your preference.
