Description

Ingredients

  • 4 large fresh tomatoes, sliced or cut into wedges
  • 1/2 small red onion, thinly sliced
  • 1/4 cup fresh basil, chopped
  • 3 tbsp olive oil
  • 1 tbsp red wine vinegar or balsamic vinegar
  • 1 garlic clove, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup mozzarella pieces (optional)
  • 1/2 cucumber, sliced (optional)

Instructions

  1. Wash and slice the tomatoes into wedges or thick slices.
  2. Thinly slice the red onion and chop the fresh basil.
  3. In a large bowl, combine the tomatoes, onion, basil, and optional cucumber.
  4. In a small bowl, whisk together olive oil, vinegar, garlic, salt, and black pepper.
  5. Pour the dressing over the salad.
  6. Gently toss everything together to coat without breaking the tomatoes.
  7. Add mozzarella pieces if desired.
  8. Let the salad rest for a few minutes before serving so the flavors blend together.
