Ingredients
- 4 large fresh tomatoes, sliced or cut into wedges
- 1/2 small red onion, thinly sliced
- 1/4 cup fresh basil, chopped
- 3 tbsp olive oil
- 1 tbsp red wine vinegar or balsamic vinegar
- 1 garlic clove, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup mozzarella pieces (optional)
- 1/2 cucumber, sliced (optional)
Instructions
- Wash and slice the tomatoes into wedges or thick slices.
- Thinly slice the red onion and chop the fresh basil.
- In a large bowl, combine the tomatoes, onion, basil, and optional cucumber.
- In a small bowl, whisk together olive oil, vinegar, garlic, salt, and black pepper.
- Pour the dressing over the salad.
- Gently toss everything together to coat without breaking the tomatoes.
- Add mozzarella pieces if desired.
- Let the salad rest for a few minutes before serving so the flavors blend together.
