Ingredients

  • 2 1/2 cup almond flour
  • 2/3 cup Swerve Sweetener
  • 1 tsp baking powder
  • 1/2 tsp salt

Wet Ingredients

  • 6 tbsp butter (melted)
  • 1 large egg
  • 1 large egg yolk
  • 1 tsp lemon zest
  • 3 tbsp lemon juice
  • 1/2 tsp vanilla extract

Fruit

  • 2/3 cup finely chopped strawberries
  • 2 medium strawberries (coarsely chopped)

Lemon Glaze

  • 1 tbsp lemon juice
  • 2/3 cup powdered Swerve Sweetener

Instructions

  1. Preheat the Oven: Preheat your oven to 325ºF (163ºC) and prepare a 9×9 inch metal baking pan by lining it with parchment paper, ensuring you leave overhanging sides to easily lift the blondies out after baking.
  2. Mix Dry Ingredients: In a large mixing bowl, whisk together the almond flour, Swerve sweetener, baking powder, and salt to evenly distribute the leavening and sweetener throughout the flour base.
  3. Combine Wet Ingredients: Add the melted butter, large egg, egg yolk, lemon zest, lemon juice, and vanilla extract to the dry ingredients. Stir thoroughly until the dough forms a cohesive mixture without lumps.
  4. Add Strawberries: Fold the finely chopped strawberries gently into the batter, taking care not to crush them excessively to maintain bursts of fresh fruit flavor within the blondies.
