Description

These Lemon Blueberry Cobbler Bars combine zesty lemon flavor with juicy blueberries in a buttery, crumbly crust and a sweet cobbler topping. Perfect for a refreshing dessert or a sweet snack, these bars are easy to make and deliver a delightful balance of tart and sweet in every bite.

Ingredients

Crust and Topping

  • 1 cup all-purpose flour
  • 1 cup old-fashioned oats
  • 1 cup packed brown sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted

Filling

  • 3 cups fresh blueberries
  • 1/2 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C) and grease or line an 8×8-inch baking pan with parchment paper for easy removal.
  2. Prepare the crust and topping mixture: In a large bowl, combine the flour, oats, brown sugar, baking powder, and salt. Pour in the melted butter and mix well until the mixture forms coarse crumbs. Reserve about 1 to 1 1/4 cups of this crumb mixture for the topping.
  3. Make the filling: In another bowl, gently toss the blueberries with granulated sugar, flour, lemon juice, lemon zest, vanilla extract, and salt until the berries are evenly coated.
  4. Assemble the bars: Press the majority of the crumb mixture firmly into the bottom of the prepared baking pan to form an even crust layer. Spread the blueberry filling evenly over the crust. Crumble the reserved crumb mixture on top, distributing it evenly over the blueberries.
  5. Bake: Bake in the preheated oven for 40 to 45 minutes, or until the topping is golden brown and the blueberry filling is bubbly around the edges.
  6. Cool and serve: Allow the cobbler bars to cool completely in the pan on a wire rack before cutting into squares. This cooling step helps the bars set and makes them easier to handle.

Notes

  • For extra flavor, consider adding a pinch of cinnamon to the crumb mixture.
  • These bars can be stored in an airtight container at room temperature for up to 3 days or refrigerated for up to a week.
  • Serving the bars slightly warmed with a scoop of vanilla ice cream makes a delicious dessert option.
  • Fresh or frozen blueberries can be used; if using frozen, do not thaw to avoid excess moisture in the filling.
