Instructions

  1. Prepare the Chicken: Pat chicken breasts dry with paper towels. Season both sides with salt and pepper. Lightly dredge each chicken breast in flour, shaking off excess to ensure a thin, even coating.
  2. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for about 5-7 minutes per side or until golden brown and cooked through, reaching an internal temperature of 165°F (74°C). Remove chicken from skillet and set aside on a plate, tented with foil to keep warm.
  3. Make the Lemon Butter Sauce: Lower the heat to medium. In the same skillet, add butter and allow it to melt. Stir in minced garlic and sauté for about 1 minute until fragrant but not browned. Pour in chicken broth and fresh lemon juice, scraping the bottom of the pan to loosen any browned bits. Let the sauce simmer gently for 3-5 minutes to reduce slightly and concentrate flavors.
  4. Finish the Sauce and Serve: Stir in lemon zest and chopped parsley. Season with salt and pepper to taste. Return the chicken to the skillet, spooning the sauce over the breasts to coat them well. Cook for an additional 1-2 minutes to reheat the chicken and meld flavors.
