Ingredients
Salmon
- 4 salmon fillets (6 ounces each), skin-on
- 2 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 3 cloves garlic, minced
- 1 tablespoon fresh dill, chopped
- 1 tablespoon fresh parsley, chopped
- Salt and freshly ground black pepper, to taste
Vegetables
- 1 pint cherry tomatoes
- 1 medium zucchini, sliced
- 1 red bell pepper, diced
- 1 small red onion, sliced
- 1 tablespoon olive oil
- Salt and freshly ground black pepper, to taste
Instructions
- Preheat oven: Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper or aluminum foil for easy cleanup.
- Prepare marinade: In a small bowl, whisk together olive oil, lemon juice, minced garlic, chopped dill, and parsley. Season with salt and pepper according to taste.
- Season salmon: Place the salmon fillets on one side of the prepared sheet pan. Brush them generously with the lemon herb marinade, ensuring they are evenly coated.
- Prepare vegetables: Arrange the cherry tomatoes, zucchini slices, red bell pepper, and red onion on the other side of the sheet pan. Drizzle with olive oil and season with salt and pepper. Toss gently to coat all the vegetables.
- Roast: Place the sheet pan in the preheated oven and roast for 12–15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender and slightly caramelized.
- Serve: Remove the sheet pan from the oven. Optionally, garnish the salmon and vegetables with additional fresh herbs and lemon wedges. Serve immediately for a warm and healthy meal.
Notes
- For more flavor, marinate the salmon for 15-30 minutes before roasting.
- Swap vegetables depending on season or preference; asparagus or green beans work well.
- Ensure salmon fillets are uniform in thickness for even cooking.
- To reduce sodium, use less salt or opt for low-sodium seasoning blends.
- Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
