Ingredients
Protein and Grains
- 1 lb ground beef
- 1 cup cooked white rice
- 1 can (15 oz) black beans, drained and rinsed
Vegetables and Toppings
- 1 cup romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup corn kernels (fresh or frozen)
- 1/2 cup shredded cheddar cheese
- 1/4 cup sliced black olives
- 1/4 cup diced red onion
- 1/4 cup fresh cilantro, chopped
Sauce and Seasonings
- 2 tablespoons taco seasoning
- 1/2 cup salsa
- 1/4 cup sour cream or Greek yogurt
- 1 tablespoon olive oil
- Salt and pepper, to taste
Instructions
- Cook the Beef: Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it apart with a spatula. Drain excess fat, then stir in taco seasoning and a splash of water. Simmer for 5 minutes until beef is well seasoned.
- Prepare the Rice and Beans: If not already cooked, prepare rice according to package instructions. Rinse and drain black beans thoroughly and set aside.
- Assemble the Bowl Base: In serving bowls, layer cooked white rice as the base, followed by seasoned ground beef and black beans.
- Add Fresh Vegetables: Top the beef and beans with chopped romaine lettuce, halved cherry tomatoes, corn kernels, sliced black olives, and diced red onion for crunch and color.
- Finish with Cheese and Sauce: Sprinkle shredded cheddar cheese over the warm ingredients so it melts slightly. Add a dollop of sour cream (or Greek yogurt) and a spoonful of salsa to enhance flavor.
- Garnish and Serve: Sprinkle fresh cilantro on top and adjust seasoning with salt and pepper as desired. Serve immediately while warm.
Notes
- For a vegetarian version, substitute ground beef with seasoned crumbled tofu or cooked lentils.
- Use brown rice or cauliflower rice for a healthier twist.
- Adjust spice level by adding jalapeños or hot sauce if desired.
- This meal can be prepped ahead and refrigerated for up to 3 days; add fresh toppings just before serving to keep them crisp.
