Ingredients
Dry Ingredients
- 1 3/4 cups (220g) all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Wet Ingredients
- 1/3 cup (75g) unsalted butter, melted
- 1/2 cup (100g) granulated sugar
- 1 large egg
- 1 cup (240ml) milk
- 1 teaspoon vanilla extract
Add-ins
- 3/4 cup (135g) mini semisweet chocolate chips
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 375°F (190°C). Grease a mini muffin tin or line with mini paper liners to prevent sticking.
- Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.
- Combine Wet Ingredients: In a large bowl, whisk the melted butter and sugar until combined. Add the egg, milk, and vanilla extract and whisk until smooth.
- Combine Wet and Dry: Gently fold the dry ingredients into the wet mixture just until no dry flour remains. Be careful not to overmix to keep the muffins tender.
- Add Chocolate Chips: Fold in the mini chocolate chips evenly throughout the batter.
- Scoop Batter: Using a mini ice cream scoop or spoon, fill each mini muffin cup about 3/4 full with batter.
- Bake: Bake in the preheated oven for 10-12 minutes, or until a toothpick inserted into the center of a muffin comes out clean or with just a few moist crumbs.
- Cool and Serve: Allow muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely. Store in an airtight container for up to 3 days or freeze for longer storage.
