Ingredients
Crust
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 teaspoon kosher salt
- 6 tablespoons unsalted butter, melted
Cheesecake Filling
- 24 oz (3 packages) cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1/2 cup sour cream
- 1/4 cup fresh lime juice
- 2 tablespoons lime zest (about 2 limes)
- 2 tablespoons tequila (silver/ blanco)
- 1 teaspoon pure vanilla extract
Topping & Garnish
- 1/2 teaspoon kosher salt
- Additional lime zest or thin lime slices for garnish
- Whipped cream (optional)
Instructions
- Prepare the Crust: Preheat the oven to 325°F (163°C). In a medium bowl, combine the graham cracker crumbs, sugar, and salt. Stir in the melted butter until the mixture is evenly moistened. Press the crumb mixture firmly and evenly into the bottom of a 9-inch springform pan. Bake the crust for 10 minutes, then remove from the oven and set aside to cool while preparing the filling.
- Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes. Gradually add the sugar and continue beating until fully incorporated and fluffy. Add the eggs one at a time, beating well after each addition. Then mix in the sour cream, lime juice, lime zest, tequila, and vanilla extract until the batter is smooth and consistent, scraping down the sides as needed to avoid lumps.
- Assemble and Bake: Pour the cheesecake batter over the cooled crust in the springform pan, smoothing the top with a spatula. Place the pan on the middle rack of the preheated oven. Bake for approximately 50-60 minutes or until the edges are set but the center slightly jiggles when shaken gently. Avoid overbaking to maintain a creamy texture.
- Cool and Chill: Turn off the oven, leave the door slightly ajar, and let the cheesecake cool inside for 1 hour to prevent cracking. Then remove from the oven and let cool completely at room temperature. Refrigerate the cheesecake for at least 4 hours or preferably overnight to allow it to fully set and the flavors to meld.
- Add Topping and Serve: Before serving, sprinkle the top lightly with kosher salt to mimic the salted rim of a margarita glass. Garnish with extra lime zest or thin lime slices and a dollop of whipped cream if desired. Carefully remove the springform pan sides, slice, and enjoy a festive margarita-inspired dessert!
Notes
- Use fresh lime juice and zest for the best bright citrus flavor.
- Tequila can be substituted with orange liqueur or omitted for a non-alcoholic version.
- Make sure cream cheese is fully softened to achieve a smooth cheesecake batter.
- Baking at a lower temperature with gradual cooling helps prevent cracks on the cheesecake surface.
- Allowing the cheesecake to chill overnight improves the texture and flavor integration.
- To make a gluten-free crust, substitute graham crackers with gluten-free alternatives.
