Ingredients

Lamb Chops

  • 8 lamb loin chops (about 1 inch thick)
  • 3 tablespoons olive oil
  • 4 garlic cloves, minced

  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and freshly ground black pepper, to taste
  • Juice of 1 lemon

Roasted Vegetables

  • 2 medium zucchinis, cut into thick slices
  • 1 large red bell pepper, cut into chunks
  • 1 large yellow bell pepper, cut into chunks
  • 1 red onion, cut into wedges
  • 1 cup cherry tomatoes
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Marinate the Lamb Chops: In a medium bowl, combine olive oil, minced garlic, dried oregano, rosemary, cumin, smoked paprika, lemon juice, salt, and black pepper. Add the lamb chops and coat them thoroughly with the marinade. Cover and refrigerate for at least 30 minutes, preferably 1-2 hours for deeper flavor.
  2. Prepare the Roasted Vegetables: Preheat your oven to 400°F (200°C). In a large mixing bowl, toss the zucchinis, red and yellow bell peppers, red onion, and cherry tomatoes with olive oil, thyme, oregano, salt, and pepper until evenly coated.
  3. Arrange on Baking Sheet: Spread the marinated lamb chops on a large baking sheet. Arrange the seasoned vegetables around the lamb, making sure everything is in a single layer to ensure even cooking.
  4. Bake the Dish: Place the baking sheet in the preheated oven and bake for about 25-30 minutes. Halfway through baking, flip the lamb chops and toss the vegetables to promote even roasting and browning. Lamb chops should reach an internal temperature of 145°F (63°C) for medium-rare or longer if preferred.
