Ingredients

Cauliflower and Vegetables

  • 1 cup cherry tomatoes, halved

  • 1/3 cup Kalamata olives, pitted and halved

Marinade

Instructions

  3. Combine the salad: In a large bowl, add the blanched cauliflower, cherry tomatoes, diced cucumber, sliced red onion, Kalamata olives, and chopped parsley. Pour the marinade over the vegetables and toss gently to coat all ingredients well.
