Description

A fresh and vibrant Mediterranean Tuna Salad combining crisp baby greens, colorful bell peppers, juicy tomatoes, and savory olives with tender tuna, dressed in a light olive oil and lemon dressing. Perfect for a quick, healthy, and flavorful meal.

Ingredients

Salad Ingredients

  • 2 cups baby greens or spring mix
  • 1 large cucumber, peeled and diced
  • 1 orange bell pepper, diced
  • 1 red bell pepper, diced
  • 1 cup grape or cherry tomatoes, halved
  • 1/2 cup artichoke hearts, roughly chopped
  • 1/3 cup kalamata olives, sliced
  • 1 (5-ounce) can of tuna, drained

Dressing

  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon ground black pepper

Instructions

  1. Combine Vegetables and Tuna: Add the baby greens, diced cucumber, orange and red bell peppers, halved grape or cherry tomatoes, artichoke hearts, and sliced kalamata olives into a large bowl. Flake the drained tuna into the bowl evenly.
  2. Prepare and Add Dressing: In the same bowl, pour in the olive oil, lemon juice, sea salt, and ground black pepper. Toss everything gently but thoroughly to combine the flavors and coat all ingredients evenly.
  3. Serve: Serve the salad immediately for the freshest taste and crunch.

Notes

  • For an extra protein boost, add boiled eggs or chickpeas.
  • Use fresh lemon juice for the best flavor in the dressing.
  • This salad can be prepped ahead of time by keeping the dressing separate until ready to serve to prevent wilting.
  • Swap regular tuna with wild-caught tuna for a more sustainable choice.
  • Adjust salt and pepper according to taste preferences.
