Ingredients

For the Chicken Marinade

To Garnish

Instructions

  1. Marinate the Chicken: In a bowl, combine olive oil, cumin, paprika, cinnamon, turmeric, cayenne pepper, minced garlic, salt, and pepper. Add the chicken breasts and coat well in the marinade. Let it sit for 15-30 minutes to absorb the flavors.
  2. Prepare the Roasted Vegetables: Preheat the oven to 425°F (220°C). Toss chopped zucchini, red bell pepper, red onion, and cherry tomatoes with olive oil, cumin, salt, and pepper on a baking sheet. Roast for 20-25 minutes until tender and slightly caramelized.
