Description

Muffin Tin Potatoes are a delightful and crispy side dish made by roasting small potato cubes in a muffin tin to create perfectly portioned, golden-brown bites. Enhanced with a blend of seasonings and cheese, they make a flavorful and convenient accompaniment for breakfast or dinner.

Ingredients

Potatoes

  • 3 large potatoes, peeled and diced into small cubes

Seasonings

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika

Others

  • 2 tablespoons olive oil
  • 1/2 cup shredded cheddar cheese
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it’s hot enough to roast the potatoes to crispy perfection.
  2. Prepare Potatoes: Peel and dice the potatoes into small, uniform cubes. This ensures they cook evenly and fit nicely in the muffin tin compartments.
  3. Toss with Seasonings: In a large bowl, combine the diced potatoes with olive oil, salt, pepper, garlic powder, and paprika. Mix well to coat every piece evenly with the seasoning and oil.
  4. Fill Muffin Tin: Lightly grease a muffin tin to prevent sticking. Divide the seasoned potatoes evenly among the muffin cups, pressing them down gently to compact them for better texture and shape.
  5. Roast Potatoes: Place the muffin tin in the preheated oven and roast for about 25-30 minutes, until the potatoes are golden and crispy on the edges and tender inside.
  6. Add Cheese and Final Bake: Sprinkle the shredded cheddar cheese evenly on top of the potatoes in each muffin cup. Return the tin to the oven and bake for an additional 5 minutes or until the cheese is melted and bubbly.
  7. Serve: Remove the muffin tin from the oven and allow the potato bites to cool slightly before carefully removing them. Garnish with chopped fresh parsley, if desired, and serve warm.

Notes

  • For extra crispiness, soak potato cubes in cold water for 15-20 minutes before seasoning, then drain and pat dry.
  • You can substitute cheddar with your favorite cheese like mozzarella or pepper jack for a different flavor.
  • These muffin tin potatoes pair excellently with eggs for breakfast or as a side to grilled meats.
  • If you don’t have a muffin tin, you can use a small baking dish, but the shape and portioning may vary.
