For the Chocolate Cupcakes

- 3/4 cup (95g) all-purpose flour
- 1/2 cup (45g) unsweetened cocoa powder
- 3/4 tsp baking powder
- 3/4 tsp baking soda
- 1/2 tsp salt
- 1/2 cup (120ml) buttermilk, room temperature
- 1/4 cup (60ml) vegetable oil
- 1 large egg, room temperature
- 1 tsp vanilla extract
- 1/2 cup (120ml) hot water
For the Purple Buttercream
- 1 cup (226g) unsalted butter, softened
- 3 1/2 cups (440g) powdered sugar, sifted
- 2–3 tbsp heavy cream or milk
- 1 tsp vanilla extract
- Gel food coloring: Purple (AmeriColor or Wilton recommended)
- Pinch of salt
For the Jack Skellington Toppers
- White fondant (about 7 oz)
- Black fondant (about 2 oz)
- Round cookie cutter (2.5″ wide or sized to match cupcakes)
- Small piping tip or sharp tool for detail work
- Cornstarch for dusting
Instructions
- Preheat and prepare: Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper cupcake liners to ensure easy removal and cleanup.
- Mix dry ingredients: In a large mixing bowl, whisk together granulated sugar, all-purpose flour, unsweetened cocoa powder, baking powder, baking soda, and salt until the mixture is uniform and free of lumps.
- Add wet ingredients: Pour in the buttermilk, vegetable oil, large egg, and vanilla extract. Mix thoroughly until the batter is smooth with no visible dry spots remaining.
- Add hot water: Slowly stir in the hot water. The batter will become thin, which is key for achieving moist, tender cupcakes once baked.
- Bake cupcakes: Evenly distribute the batter among the prepared cupcake liners, filling each about two-thirds full. Bake in the preheated oven for 18–20 minutes or until a toothpick inserted in the center comes out clean.
- Cool completely: Allow cupcakes to cool in the pan for 5 minutes before transferring them to a wire rack to cool entirely, ensuring the frosting adheres well.
- Make buttercream: Using a stand mixer fitted with a paddle attachment, beat the softened unsalted butter on medium speed for 2–3 minutes until light and fluffy. Gradually add the sifted powdered sugar, mixing well after each addition. Incorporate the vanilla extract, a pinch of salt, and add heavy cream or milk one tablespoon at a time until the buttercream reaches a smooth, pipeable consistency. Add purple gel food coloring as desired and mix until fully blended.
- Prepare Jack Skellington toppers: Roll out white fondant to about 1/8 inch thickness and use a 2.5-inch round cookie cutter to cut out circles for the cupcake tops. Shape black fondant using a small piping tip or sharp tool to create Jack Skellington’s facial features, then carefully place these on each fondant circle. Dust lightly with cornstarch if necessary to prevent sticking.
- Assemble cupcakes: Pipe the purple buttercream onto cooled chocolate cupcakes in your preferred swirl or design. Top each cupcake with a Jack Skellington fondant decoration for a striking and festive finish.
Notes
- Ensure all wet ingredients for the cupcakes are at room temperature to help the batter mix evenly.
- When adding hot water, add it slowly to prevent splashing and to maintain the right batter consistency.
- You can substitute buttermilk with milk plus 1 tbsp lemon juice or vinegar if needed, letting it sit for 5 minutes before using.
- Gel food coloring is recommended over liquid to avoid thinning the buttercream.
- Allow cupcakes to cool completely before frosting to prevent the buttercream from melting.
- Store finished cupcakes in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
- Bring refrigerated cupcakes to room temperature before serving for best flavor and texture.
