Delicious and visually charming No-Bake Pinecone Truffles made with vegan and gluten-free ingredients, perfect for a quick and easy dessert that requires no baking. These bite-sized treats combine chocolate biscuit crumbs, dairy-free cream cheese, cocoa powder, and are coated with chocolate-coated cornflakes to resemble pinecones.
Ingredients
Truffle Mixture
- 150g chocolate biscuits (vegan Bourbon biscuits or gluten-free alternatives)
- 60g dairy-free cream cheese
- 1 tablespoon cocoa powder
Coating
- Vegan friendly cornflakes (can be gluten-free)
- 200g dairy-free dark chocolate
Instructions
- Prepare tray: Line a baking tray with greaseproof paper and set it aside to place truffles on later.
- Crush biscuits: Place the chocolate biscuits in a food processor or blender and blend until they reach a crumb-like consistency. If you do not have a blender, crush them using a rolling pin inside a sealed bag.
- Mix truffle base: Transfer the biscuit crumbs into a large mixing bowl. Add the dairy-free cream cheese and cocoa powder, mixing thoroughly until the mixture is well combined and sticky enough to form balls.
- Shape truffles: Using clean hands, roll the mixture into small balls about 20g each. Place them onto the lined tray. Pinch the top of each ball to create an oval or pinecone shape.
- Attach cornflakes: Starting from the base of each truffle, press vegan cornflakes into the surface, working upwards towards the top, using smaller cornflakes as you reach the tip to create a pinecone texture. Refer to any visual guide if available to size your cornflakes accordingly.
- Freeze truffles: Place the tray with the truffles into the freezer and allow them to set for approximately 25 minutes to firm up, which helps the cornflakes adhere better during chocolate coating.
- Melt chocolate: About 5 minutes before removing truffles from the freezer, melt the dark chocolate using a bain-marie method by placing a bowl on top of a saucepan with boiling water, stirring gently until smooth. Alternatively, melt in the microwave in 20-second intervals, stirring between each interval.
- Coat and finish: Once the truffles are firm and the chocolate is melted, dip or brush the chocolate over the truffles to coat and seal the cornflakes in place. Allow the chocolate to set before serving.
