Description

Deliciously moist and flavorful Nutella Banana Swirl Muffins made with ripe bananas and infused with a luscious Nutella swirl, perfect for breakfast or an indulgent snack.

Ingredients

Wet Ingredients

  • 2 large ripe bananas (mashed)
  • 1/3 cup melted butter (or Greek yogurt for a lighter option)
  • 1 large egg (beaten)
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1/2 cup sugar (can substitute with brown sugar)
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour

Additional

  • 1/2 cup Nutella (for swirling)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners to prepare for baking.
  2. Combine Wet Ingredients: In a large bowl, mash the ripe bananas, then mix in the sugar and melted butter until the mixture is smooth and well combined.
  3. Add Egg and Vanilla: Stir in the beaten egg and vanilla extract to the banana mixture until fully incorporated.
  4. Prepare Dry Ingredients: In a separate bowl, whisk together the baking soda, salt, and all-purpose flour to evenly distribute the leavening and seasoning.
  5. Mix Batter: Gradually add the dry ingredient mixture to the wet banana mixture, stirring gently just until combined to avoid overmixing which can make muffins tough.
  6. Fill Muffin Cups: Spoon about one tablespoon of batter into each muffin cup, filling them partially to leave space for the Nutella swirl.
  7. Add Nutella Swirl: Top each muffin cup with a teaspoon of Nutella, then gently swirl it into the batter using a toothpick or knife for a marbled effect.
  8. Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes or until a toothpick inserted in the center comes out clean, indicating the muffins are fully cooked.
  9. Cool and Serve: Remove the muffins from the oven, allow them to cool slightly in the pan before transferring to a wire rack or serving warm.

Notes

  • For a lighter version, substitute melted butter with Greek yogurt.
  • You can use brown sugar instead of white sugar for a richer flavor.
  • Do not overmix the batter to keep muffins tender and moist.
  • Ensure bananas are very ripe for the best sweetness and flavor.
  • Swirling Nutella gently will create a pretty marbled look without blending it fully into the batter.
