Ingredients
- 1 1/2 cups rolled oats
- 1/2 cup peanut butter or almond butter
- 1/3 cup honey or maple syrup
- 1/2 cup mini chocolate chips
- 1/4 cup ground flaxseed
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- Pinch of salt
Instructions
- Add the rolled oats, ground flaxseed, cinnamon, and salt to a large mixing bowl.
- Stir in the peanut butter, honey, and vanilla extract until fully combined.
- Fold in the mini chocolate chips evenly throughout the mixture.
- If the mixture feels too soft, refrigerate it for 15 to 20 minutes.
- Scoop small portions and roll them into bite-sized balls using your hands.
- Place the energy balls on a lined tray or plate.
- Refrigerate until firm.
- Serve chilled or at room temperature.
