Ingredients
For the Peach Filling
- 6 cups fresh peaches, peeled and sliced
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 2 teaspoons cornstarch
For the Cobbler Topping
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 6 tablespoons unsalted butter, chilled and cut into pieces
- 1/4 cup boiling water
- 1 teaspoon vanilla extract
- 2 tablespoons granulated sugar, for sprinkling on top
Instructions
- Prepare the Peach Filling: In a large bowl, combine sliced peaches, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Toss gently to coat and set aside to marinate while you prepare the topping.
- Make the Cobbler Topping Dough: In a separate bowl, mix together the flour, granulated sugar, baking powder, and salt. Using a pastry cutter or your fingers, cut in the chilled butter until the mixture resembles coarse crumbs.
- Add Boiling Water and Vanilla: Stir in the boiling water and vanilla extract just until the dough comes together—it will be slightly sticky but thick.
- Assemble the Cobbler: Pour the peach filling with all the juices into a greased 8-inch square baking dish or similar. Drop spoonfuls of the cobbler topping dough over the peaches evenly.
- Sprinkle Sugar: Sprinkle the 2 tablespoons of granulated sugar over the dough to give the crust a sweet, crisp finish.
- Bake the Cobbler: Bake in a preheated 425°F (220°C) oven for 20 minutes, then reduce the temperature to 350°F (175°C) and bake for an additional 25 to 30 minutes, or until the topping is golden brown and the peach filling is bubbly.
- Cool and Serve: Let the cobbler cool slightly before serving to allow the filling to thicken. Serve warm, ideally with a scoop of vanilla ice cream or whipped cream.
Notes
- For easier peeling, blanch peaches in boiling water for 30 seconds, then transfer to ice water before peeling.
- If fresh peaches are not in season, canned peaches drained well can be used as a substitute.
- Adjust the sugar in the filling depending on the sweetness of your peaches.
- Store leftovers covered in the refrigerator for up to 3 days and reheat before serving.
- This cobbler topping can be varied by adding a pinch of nutmeg or substituting some flour for whole wheat for a heartier texture.
