Chicken

  • 4 bone-in, skin-on chicken thighs

  • 1 teaspoon paprika
  • 2 tablespoons olive oil

Potatoes

  • 1.5 pounds baby potatoes, halved
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried rosemary

Garnish

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it’s hot enough to roast the chicken and potatoes until golden and crispy.
  2. Prepare Chicken: In a small bowl, combine minced garlic, salt, pepper, dried thyme, paprika, and olive oil. Rub this garlic seasoning mixture evenly all over the chicken thighs, making sure to get some under the skin for maximum flavor.
  3. Prepare Potatoes: In a large bowl, toss the halved baby potatoes with olive oil, salt, pepper, and dried rosemary until well coated.
  4. Arrange in Pan: Place the seasoned potatoes in an even layer on a large baking sheet or roasting pan. Arrange the chicken thighs skin side up on top of the potatoes, allowing the juices from the chicken to flavor the potatoes as they cook.
