This One Pot Lasagna recipe is a simplified, no-fuss version of traditional lasagna that combines all the layers of pasta, meat sauce, and cheese in a single pot for an easy and hearty Italian comfort meal. Ideal for busy weeknights, this dish layers lasagna noodles, rich tomato meat sauce, creamy ricotta, and melted mozzarella directly in the pot, eliminating the need for baking in the oven and saving time on cleanup.


Ingredients

Meat Sauce

  • 1 pound ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 cups marinara sauce
  • 1 cup water
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste

Lasagna Layers

  • 9 lasagna noodles, broken into pieces
  • 1 ½ cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese

Garnish

  • Fresh basil leaves, chopped (optional)

Instructions

  1. Prepare the Meat Sauce: In a large deep skillet or pot, heat a little oil over medium heat. Add diced onions and minced garlic and sauté until soft and fragrant. Add ground beef and cook until browned, breaking it apart with a spatula.
  2. Add Sauce and Seasonings: Pour in the marinara sauce and water, stirring to combine. Season with dried basil, oregano, salt, and pepper. Bring the mixture to a gentle simmer.
  3. Layer the Lasagna: Once the sauce is simmering, arrange broken lasagna noodle pieces evenly over the meat sauce layer in the pot. Dollop and spread ricotta cheese over the noodles, then sprinkle with mozzarella and Parmesan cheese. Repeat layering if space allows, ending with a layer of mozzarella on top.
  4. Simmer Covered: Cover the pot with a tight-fitting lid and reduce heat to low. Let the lasagna cook gently for 20-25 minutes, until the noodles are tender and the cheese has melted.
  5. Rest and Serve: Remove the pot from heat and let it rest covered for 5 minutes. Garnish with fresh basil if desired. Serve warm directly from the pot.
