Ingredients
Beef and Buckwheat
- 1 pound (450g) beef stew meat, cut into cubes
- 1 cup (170g) buckwheat groats
- 3 cups (720ml) beef broth or water
Vegetables and Aromatics
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 medium carrot, diced
- 1 celery stalk, diced
Seasonings and Oils
- 2 tablespoons vegetable oil or olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika (optional)
- 1 bay leaf
Instructions
- Prepare the Ingredients: Rinse the buckwheat groats under cold running water to remove any impurities and set aside. Chop the onion, carrot, celery, and mince the garlic.
- Sauté the Vegetables: Heat the vegetable oil in a large pot over medium heat. Add the chopped onions, carrots, and celery, sautéing until the onions become translucent and the vegetables soften, about 5-7 minutes. Add minced garlic during the last minute.
- Brown the Beef: Increase the heat to medium-high and add the beef cubes to the pot. Cook, stirring occasionally, until the beef is browned on all sides, about 6-8 minutes. This step helps to develop rich flavors.
- Add Seasonings and Buckwheat: Sprinkle the salt, black pepper, and paprika over the beef and vegetables. Stir in the rinsed buckwheat groats, mixing well to combine all ingredients evenly.
- Add Liquids and Simmer: Pour in the beef broth or water and add the bay leaf. Bring the mixture to a boil, then reduce the heat to low. Cover the pot with a tight-fitting lid and let it simmer gently for 20-25 minutes, or until the buckwheat is tender and most of the liquid has been absorbed.
- Rest and Serve: Remove the pot from heat and let it rest, covered, for 5 minutes. Discard the bay leaf before serving. Fluff the buckwheat with a fork and serve warm as a satisfying main dish.
